油揚げ 8枚
砂糖 大さじ2 ☆
みりん 大さじ2 ☆
醤油 大さじ2 ☆
顆粒だし 小さじ1/2 ☆
水 200ml ☆
ご飯 1.5合~2合(約500~750g)
砂糖 大さじ2 ★
米酢 大さじ2 ★
塩 小さじ1 ★
白ごま 大さじ2


  1. 油揚げを半分に切り、中が袋状になるように手で開いておく。
  2. 1を鍋に沸かした熱湯に入れて、1分程ゆでて油抜きをする。すぐにザルに移して軽く水気を切る。
  3. 鍋に☆の水と調味料、油揚げを入れ、煮汁がほとんど無くなるまで煮る。火を止めたら、そのまま冷ます。
  4. ★の調味料を合わせておく。炊き立ての温かいごはんをボールに入れて、合わせた調味料を少しずつ加えながら、しゃもじで切るように混ぜる。白ごまも加えて一緒に混ぜる。
  5. ボールの中で出来上がったすし飯がだいたい16等分になるように分けておく。
  6. 粗熱のとれた3の油揚げの汁気を軽く絞る。5のすし飯を手でふんわりとたわら型に握ってから油揚げの中に詰め、形を整える。



ひなまつり ~蛤のお吸い物~- The Doll’s Festival & Cram Soup –

~ Inari-zushi / Sushi Pocket ~

The day of March 3rd is called “Hina-matsuri” in Japan. It is a Japanese traditional festival for the girls. People celebrate and wish for their healthy growth and happiness. And then, they eat the traditional feasts with their family to celebrate it.
The famous ones are like, “Sushi”, “Cram Soup”, “Shiro-zake”, “Hina- Arare” and so on.
Do you know that there are many types of sushi in Japan? I’m going to introduce one of the sushi recipe. It’s called “Inari-zushi” and you can eat them casually at home.

Ingredients (16 pieces)

8 piece of abura-age (deep-fried tofu)
2 table spoon of sugar
2 table spoon of cooking sake
2 table spoon of soy sauce
1/2 tea spoon of instant broth granules
200ml of water
1.5 ~ 2 cup of cooked rice (about 500 ~ 750g)
2 table spoon of sugar ★
2 table spoon of vinegar ★
1 tea spoon of salt ★
2 table spoon of white sesame seeds


  1. Cut the abura-age (deep-fried tofu) in halves and open each pocket by hand.
  2. Boil (1) for about one minute to remove excess oil. Drain the abura- age using a strainer.
  3. Put the water, seasonings (☆) and abura-age into a pot. Then, simmer them until almost all broth are reduced. Cool it down after turning off the heat.
  4. Mix the seasonings (★). Put the freshly cooked hot rice into the bowl. Fold the seasonings and white sesame seeds into the rice by wooden spatula.
  5. Divide (4) into 16 pieces and shape it into cylinder gently.
  6. Squeeze the abura-age (3) lightly. Open its pocket and put the rice in it. Reshape it and serve on the plate.

One-point advice

・When you do the step 4, don’t mix them too much or they will be sticky and become hard.
・Place a inari-zushi upside down and decorate with some toppings like cucumbers, sashimi, eggs…. It looks gorgeous and more fun!
